Recipe of the Month: BBQ Shrimp Straight from New Orleans!

The Seafood Shack’s Executive Chef, Gerard Jesse, spent several years in New Orleans and worked at some of the city’s most beloved institutions, including Cochon Restaurant, The Ritz-Carlton New Orleans and French Quarters Stella! One of his favorite dishes of all time is BBQ Shrimp – which requires neither grill nor barbecue pit. New Orleans BBQ Shrimp means huge, juicy shrimp dripping with butter, garlic, Worcestershire sauce and spices. Despite being so simple this New Orleans style BBQ shrimp is so addictively good that you’ll want to serve it with some crusty bread to mop up absolutely all of the BBQ sauce!

New Orleans Barbecued Shrimp
(Serves 2)

Creole Seasoning
8 oz salt
2 oz granulated garlic
2 oz ground black pepper
1 tsp cayenne pepper
1 tsp thyme
1 tsp oregano
2 oz paprika
1 tbl granulated onion

Method: Blend all ingredients in a mixing bowl. Store in a sealed container.

Shrimp Dish
4 large fresh shrimp, head on
6 tbls unsalted butter, cold and cut into 1 oz pieces
1 1/2 tsp ground black pepper
1 1/2 tsp cracked black pepper
1 tsp Creole Seasoning (recipe above)
3 tbls Worcestershire sauce
1 tsp chopped garlic
Juice of 1 lemon

Method: Place the shrimp and all the ingredients, except the lemon juice and 3 oz unsalted butter, in a sauté pan large enough so that the shrimp are in one layer. Place the shrimp in a 450 degree oven for 2 minutes. Turn the shrimp and return to the oven for 2 – 3 minutes. Remove the shrimp from the oven and begin to sauté over moderate heat. Add the lemon juice and melt the remaining 3 tbls of cold butter by swirling the pan and stirring with a fork. Serve the shrimp in a bowl and pour the sauce over the shrimp. Garnish with hot French bread for dipping.
