Award Winning Crawfish Mac and Cheese Featured in Suncoast View - ABC-TV Channel 7

Ingredients 

  • 1 ½ cups Heavy Cream
  • ¼ cup Shredded Gouda Cheese
  • ¼ cup Shredded Swiss Cheese
  • ¼ cup Shredded White Cheddar Cheese
  • 5 oz. Cooked Crawfish Tail Meat
  • 4 oz. Pasta, cooked 1 Lemon, halved 1 tsp.
  • Butter To Taste
  • Salt

Instructions

Begin by heating a sauté pan on medium high heat. Add the heavy cream and reduce until it begins to become thick and glossy (About 2 min.). Reduce heat to low. Now add the cooked pasta and crawfish tails and allow the cream to take on the flavor of the tails (about 1 min.) Fold in all three cheeses at the same and stir constantly until cheese is thoroughly blended into cream. Once sauce has thickened, add the butter and stir until completely melted through sauce and no longer visible. Use salt to taste and finish off with a squeeze of fresh lemon juice. Enjoy!
